INGREDIENTS

  • Cooking Time: 25
  • Preparation Time: 10
  • cooked potatoes (baked/jacket are best but you can use cooked salad potatoes)
  • butter
  • 1 onion chopped
  • mushrooms sliced
  • double (heavy) cream
  • celery salt
  • pepper
  • grated cheddar
  • crushed potato crisps or corn chips (optional)

DIRECTIONS

set oven to 350


Cut potatoes into wedges and lay in single layer in shallow ovenproof dish and warm them in the microwave for a couple of minutes.


whilst the potatoes are warming through put onion, mushroom and butter in microwave proof bowl


take potatoes out of microwave and put in oven then cook onion mushroom mix in microwave to cook for couple of minutes untill soft


when softened mix in cream and season with celery salt and pepper. pour over potatoes and top with grated cheese and crushed crisps if using


cook for 20 min or until golden and bubbling

this is wonderful for mid week dinner but would be posh enough for entertaining. perfect with veggie burger, bacon or steak and salad
