In high school I worked at a tiny coffee shop called Java. It was the first time I ever got to bake for strangers, and I loved every moment of it. I worked for peanuts, but I got to use a huge industrial oven and any ingredients that I wanted, so it was all worth it. This cake was one of the best sellers. My mom found a scrap of paper in her recipe box recently with my scrawled teenage handwriting and this recipe on it. Soon as peaches are back in season I am making it again!

  • 1 stick unsalted butter
  • 1/4 cup milk
  • 1 1/2 lbs. peaches, boiled, peeled and cubed
  • 2 cups blueberries, washed and dried
  • 3 eggs
  • 1 1/4 cups sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 1/2 cups flour

  • Preheat oven to 350 degrees
  • In a saucepan, heat milk and butter over medium heat until butter melts and set aside
  • Beat eggs and sugar until pale and thick
  • Add salt and baking powder
  • Alternate flour with milk and butter mixture, beating slowly
  • Fold in peaches and blueberries
  • Pour into greased tube pan and smooth top
  • Bake 1 hour and 10 minutes or until toothpick inserted into cake comes out clean
