Why I Love This Recipe
In high school I worked at a tiny coffee shop called Java. It was the first time I ever got to bake for strangers, and I loved every moment of it. I worked for peanuts, but I got to use a huge industrial oven and any ingredients that I wanted, so it was all worth it. This cake was one of the best sellers. My mom found a scrap of paper in her recipe box recently with my scrawled teenage handwriting and this recipe on it. Soon as peaches are back in season I am making it again!
Ingredients You'll Need
1 stick unsalted butter
1/4 cup milk
1 1/2 lbs. peaches, boiled, peeled and cubed
2 cups blueberries, washed and dried
3 eggs
1 1/4 cups sugar
2 tsp. baking powder
1/4 tsp. salt
2 1/2 cups flour
Directions
Preheat oven to 350 degrees
In a saucepan, heat milk and butter over medium heat until butter melts and set aside
Beat eggs and sugar until pale and thick
Add salt and baking powder
Alternate flour with milk and butter mixture, beating slowly
Fold in peaches and blueberries
Pour into greased tube pan and smooth top
Bake 1 hour and 10 minutes or until toothpick inserted into cake comes out clean
