Grand Mere Tart

INGREDIENTS
  • Dough:
  • 200 g flour
  • 100 g butter
  • 4 g salt
  • 20 g sugar
  • 1 Tbl. cold water
  • 1 egg
  • Filling:
  • 2 apples, cubed
  • 2 pears, cubed
  • 50 g. walnuts, chopped
  • 50 g pistachios, whole
  • 60 g butter
  • 60 g sugar
  • 100 g cream
  • toasted sliced almonds for garnish
DIRECTIONS
  1. Preheat oven to 350
  2. Cream flour and butter.
  3. add sugar and salt
  4. addpinch of vanilla powder
  5. add egg and water
  6. Partially blind bake.
  7. Filling:
  8. Caramelize butter and sugar, and add apples and pears and cook out.
  9. Add cream, reduce a bit
  10. Add nuts to warm through.
  11. Pour into prepared tart shell and bake at 350 for 35 minutes or until bubbling.
  12. Let cool, garnish with ground pistachios.
