Jo-Anne’s Famous Greek Salad

INGREDIENTS
- 2 heads of Romaine hearts or 1 large head of Romaine lettuce, torn
- half a large red onion, thinly sliced
- 1 tin of sliced black olives, drained
- 2 ripe yet firm tomatoes, diced
- 1 large or 2 medium cucumbers, diced
- 1 red pepper, diced
- 1 container of Feta cheese from the deli counter, drained and crumbled (about 250 grams)
- Dressing:
- a little less than 1/2 cup of olive oil
- a little more than 1/2 cup of lemon juice
- 2 - 3 cloves of garlic, minced
- 2 - 3 tablespoons of dried oregano
DIRECTIONS
- Combine salad ingredients in a large bowl and toss.
- I usually make my dressing in a pampered chef salad dressing container that whips/emulsifies it.
- Combine salad dressing ingredients until smooth.
- Drizzle over salad.
- Toss salad again and serve immediately.
