Jo-Anne’s Famous Greek Salad
INGREDIENTS
  • 2 heads of Romaine hearts or 1 large head of Romaine lettuce, torn
  • half a large red onion, thinly sliced
  • 1 tin of sliced black olives, drained
  • 2 ripe yet firm tomatoes, diced
  • 1 large or 2 medium cucumbers, diced
  • 1 red pepper, diced
  • 1 container of Feta cheese from the deli counter, drained and crumbled (about 250 grams)
  • Dressing:
  • a little less than 1/2 cup of olive oil
  • a little more than 1/2 cup of lemon juice
  • 2 - 3 cloves of garlic, minced
  • 2 - 3 tablespoons of dried oregano
DIRECTIONS
  1. Combine salad ingredients in a large bowl and toss.
  2. I usually make my dressing in a pampered chef salad dressing container that whips/emulsifies it.
  3. Combine salad dressing ingredients until smooth.
  4. Drizzle over salad.
  5. Toss salad again and serve immediately.
