15-minute Skillet Cassoulet

  • 2 sprays cooking spray
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 8 oz low fat sausage, smoked, sliced 1/4 inch thick
  • 1/4 t thyme
  • 3/4 C chicken broth
  • 30 oz canned great northern beans, rinsed and drained
  • 1 1/2 T canned tomato paste
  • 1/2 C dried plain breadcrumbs
DIRECTIONS
  1. Preheat broiler
  2. Use oven safe skilled. Coat with cooking spray and heat.
  3. Add onion, garlic and sausage to pain and saute until onion is tender (3-4 minutes)
  4. Add thyme, broth, beans and tomato paste
  5. simmer 10 minutes
  6. Sprinkle bread crumbs over beans
  7. Place skillet under broiler until breadcrumbs are browned (1-2 minutes)
  8. Serving ~ 1 3/4 C
  9. 9 Points Plus per serving
  10. I add chopped red pepper, Tabasco and red pepper flakes
