3-ingredients mushroom soup
  • Cooking Time: 5 mins tops
  • Servings: 2-3
  • Preparation Time: 5 mins tops
  • 2 cups low-sodium broth (vegetable or chicken, whichever you prefer)
  • 1/2 lb mushrooms, preferably fresh, cleaned and sliced
  • 1-2 tbsp mascarpone
  • A knob of butter or a little olive oil
  1. In a medium pan, sautée the sliced mushrooms in a little butter or olive oil, depending on your taste (I used salted butter)
  2. Add the broth and mascarpone
  3. Stir a bit then whiz until smooth
