5 Ingredient Layered Enchiladas

  • 1 (10oz) can enchilada sauce
  • 1 (10oz) can of chicken
  • 1 cup mexican blend or pepper jack cheese
  • 10 corn tortillas
  • 1 (8oz) can salsa
DIRECTIONS
  1. Preheat oven to 400F. Pour a little enchilada sauce on bottom of 8X8 pan to coat. Pour remaining enchilada sauce in shallow dish. Dip 3 tortillas into sauce to coat and then place in pan (you may need to cut some piece up to get into the corners). Mix the chicken and half of salsa in a bowl. Spread half of chicken mixture on top of tortillas. Sprinkle with 1/2 cup of cheese. Repeat with rest of tortillas. When you have one tortilla left, place it on the center of dish. Pour remaining salsa, enchilada sauce and cheese on top. Bake for 30 minutes, then broil about 3-5 minutes or until cheese is golden brown. Serve right away.

This recipe is great for the college student. It is cheap, is filling and minimal tools are required. I just made it in my dorm and worked out great!
