APPLE PANCAKES WITH APPLE CIDER SAUCE
INGREDIENTS
  • 2 1/4 c. White Lily self-rising flour
  • 2 Tbsp. sugar
  • 1/2 tsp. cinnamon
  • 2 well beaten egg yolks
  • 2 c. milk
  • 2 Tbsp. butter or margarine,melted
  • 1 c. finely chopped pared apple
  • 2 stiff beaten egg whites
  • butter or margarine
DIRECTIONS
  1. Stir together flour, sugar and cinnamon.
  2. Combine egg yolks and milk; stir into flour mixture just until dry ingredients are moistened.
  3. Stir in the 2 tablespoons butter or margarine and the apple.
  4. Fold in egg whites.
  5. Let batter stand a few minutes.
  6. Preheat griddle.
  7. Bake on lightly greased hot griddle using 1/3 cup batter for each. (Use a spatula to spread batter evenly.)
  8. Dot with butter or margarine.
  9. Makes 15 pancakes.
