ARTICHOKE HORS D'OEUVRE

  • 2 (6 oz.) jars marinated
  • artichoke
  • 1 small onion, finely minced
  • 1 clove garlic, minced
  • 4 eggs
  • 1/4 c. fine dry bread crumbs
  • 1/4 tsp. salt
  • 1/8 tsp. each oregano, Tabasco
  • sauce, pepper
  • 2 Tbsp. parsley
  • 1/4 pound Cheddar cheese - shredded
  • 1/4 pound hot pepper cheese - shredded
  • Green chilis may be added to mixture.
DIRECTIONS
  1. Drain artichoke hearts. Reserve liquid from 1 jar and saute onion and garlic in liquid.
  2. Put chopped artichoke hearts in bowl.
  3. Beat eggs and add bread crumbs, salt, oregano,
  4. Tabasco sauce, pepper and parsley.
  5. Add onion-artichoke mixture to egg mixture.
  6. Add cheeses to mixture, along with chilis, if being used.
  7. Bake at 325 degrees for 30 minutes in a 9-inch square greased pan.
  8. Let cool for 2 hours.
  9. Cut into squares. Serve warm or cold.
