ARTICHOKE NIBLETS
INGREDIENTS

  • 2 (6 oz.) jars marinated
  • artichokes
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 4 eggs
  • 1/4 c. fine bread crumbs
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. oregano
  • 1/8 tsp. liquid hot pepper
  • seasoning
  • 1/2 lb. sharp Cheddar cheese
  • 2 Tbsp. minced parsley
DIRECTIONS
  1. Drain marinade from one jar to the artichokes into a frying pan.
  2. Drain the other jar.
  3. Chop artichokes and set aside.
  4. Add onion and garlic to frying pan and saute until onion is limp (about 15 minutes).
  5. In a bowl beat eggs; add bread crumbs, salt, pepper, oregano and hot pepper seasoning.
  6. Stir in cheese, parsley and artichokes and onion mixture.
  7. Turn into greased 9 x 13-inch baking dish.
  8. Bake at 325 degrees oven for about 30 minutes.
  9. Let cool in pan, then cut into 1 inch
  10. squares.
  11. Serve cold or reheat in pan in 325 degrees oven 10 to 12 minutes.
