Amish Slaw aka Refrigerator Slaw
INGREDIENTS

- Preparation Time: 15 min
- 1 medium head cabbage, cored and shredded
- 1 medium onion, finely chopped (I prefer sweet onion)
- 2-3 carrots, grated
- (optional: thinly sliced red peppers)
- 1 cup white sugar
- 1 cup vinegar
- 1 tsp salt
- 1 tsp celery seed
- 1-2 tsp mustard
- 3/4 cup vegetable oil
DIRECTIONS
- Prepare cabbage, carrot, and onion and mix together in large bowl.
- Mix together remaining ingredients and put into saucepan. Bring to a boil over medium heat and then cook over for 3 minutes.
- Cool vinaigrette completely.
- Pour over slaw veggies and let stand for a minimum of 3 hours or overnight is even better.
