Angel Acres Super Yummy Zucchini Casserole

  • For Zucchini -
  • 2-3 WHOLE ZUCCHINI
  • ½ CUP RED ONION, CHOPPED
  • 2 LARGE TOMATOES, CHOPPED
  • 2 T BACON GREASE
  • 2 T OLIVE OIL
  • For Sauce -
  • 2 T BUTTER
  • 2 T FLOUR
  • 1 ½ C HOT MILK
  • PINCH NUTMEG
  • 2 EGGS SLIGHTLY BEATEN
  • ¼ CUP PARMESAN CHEESE
DIRECTIONS
  1. Heat Oven to 350 degrees
  2. Part 1:
  3. SLICE ZUCCHINI, DICE ONIONS.
  4. COOK IN OLIVE OIL/BACON GREASE MIXTURE UNTIL SOFT ABOUT 8 – 10 MINUTES.
  5. ADD CHOPPED TOMATOES FOR LAST 2 MINUTES.
  6. PUT IN GREASED CASSEROLE DISH
  7. Part 2:
  8. HEAT BUTTER IN MICROWAVE FOR 30 SECONDS.
  9. ADD FLOUR AND BLEND.
  10. STIR IN HEATED MILK.
  11. COOK IN MICROWAVE 2 – 3 MINUTES.
  12. STIR EVERY MINUTE UNTIL THICKENED.
  13. ADD NUTMEG.
  14. STIR IN BEATEN EGG.
  15. POUR SAUCE OVER ZUCCHINI MIXTURE.
  16. TOP WITH CHEESE.
  17. BAKE UNTIL TOP IS GOLDEN - ABOUT 20 MINUTES.
