Apricot Sausage Rice

  • 1 lb tube frozen sausage
  • 1/2 med onion, diced
  • 1 stalk celery, chopped
  • 1 1/2 cup rice
  • 1/2 cup dried apricots, halved and sliced
  • 1/2 pecans, chopped (almonds also work well)
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3 cups water or chicken stock
DIRECTIONS
  1. Brown sausage and stir in onions & celery in a large sauce pan. Remove from heat and drain fat.
  2. Stir in water or stock, rice, apricots, pecans, and spices.
  3. Bring to a boil, then reduce heat to simmer for 20 min with lid on. No peeking.
  4. Let stand 5 min.
  5. Enjoy!
