Apricot daiquiri

  • crushed ice
  • 1 part white rum
  • 1 part fresh lemon juice
  • 1/2 part apricot liqueur or brandy
  • 3 ripe apricot, peeled and stoned
  • TO DECORATE
  • apricot slice
  • cocktail cherry
  • mint sprig
DIRECTIONS
  1. Put some crushed ice into a blender
  2. Add the rum, lemon juice, apricot liqueur or brandy and the apricot
  3. Blend for 1 minute or until the mixture is smooth
  4. Pour into a chilled cocktail glass
  5. Decorate with an apricot slice, a cocktail cherry and a mint sprig
