Aunt Judy's Key Lime Pie

INGREDIENTS
  • Servings: 8
  • 1 9-inch deep dish pie shell
  • 3 eggs separated
  • 1 (14-oz.) can Sweetened Condensed Milk
  • 1/2 Cup lime juice
  • 2 - 3 drops green food coloring
  • 1/2 tsp. cream of tartar
  • 1/3 Cup sugar
DIRECTIONS
  1. Preheat oven to 325 degrees.
  2. In medium mixing bowl, beat egg yolks; gradually beat in milk and lime juice.
  3. Stir in food coloring.
  4. Pour into pie shell.
  5. Bake 30 minutes.
  6. Remove from oven.
  7. Increase oven temperature to 350 degrees.
  8. Meanwhile for meringue, with clean mixer, beat egg whites and cream of tartar to soft peaks. Gradually beat in sugar, 1 Tbls. at a time.
  9. Beat 4 minutes or until stiff, glossy peaks form and sugar is dissolved.
  10. Immediately spread meringue over hot pie,
  11. carefully sealing to edge of crust to prevent meringue from shrinking.
  12. Bake 15 minutes.
  13. Cool 1 hour.
  14. Chill at least 3 hours.
  15. Store covered in refrigerator.
