Avocado Eggs Benny

- 1/2 Avocado (very ripe)
- 1 1/2 Tbsp Light Mayonnaise
- 1 Egg
- 1 1/2 Tbsp Feta Cheese
- 1/2 Tbsp Lemon Juice
- 1 Slice of Multigrain Bread
- 1 Pinch each - Salt and Pepper
DIRECTIONS
- Fry or poach egg. Add feta near end of cooking to top of egg to slightly melt. Toast bread. Mix mayonnaise, lemon juice, S&P, avocado very well with whisk till there are no lumps. Top egg on toast and pour sauce on top.
