BARLEY-MUSHROOM MEDLEY

INGREDIENTS
  • 2 Tbsp. margarine
  • 1/2 c. sliced mushrooms
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 c. medium pearl barley
  • 2 c. chicken broth
  • 1/2 tsp. salt
DIRECTIONS
  1. Heat margarine in heavy 3 quart saucepan. Saute mush-
  2. rooms, onion and green pepper for 5 minutes, stirring frequent-
  3. ly. Add barley, chicken broth and salt; stir. Heat to boil-
  4. ing. Reduce heat. Cover and simmer for 45 to 50 minutes or
  5. until barley is tender and liquid is absorbed. Stir occasion-
  6. ally and add broth, if necessary.
