BLUEBERRY YOGURT MUFFINS

  • 2 cups Quaker Oat Bran Hot cereal uncooked
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1 carton (8 ozs) plain low fat yogurt
  • 2 egg whites slightly beaten
  • 1/4 cup skim milk
  • 1/4 cup honey
  • 2 Tbsp vegetable oil, 1 tsp grated lemon peel, 1/2 cup blueberries
DIRECTIONS
  1. Preheat oven to 425 degrees F, prepare pans. In large bowl, combine oat bran, sugar and baking powder.
  2. In small bowl, combine yogurt, egg whites, milk, honey, oil and lemon peel.
  3. Add dry mix to wet mix and stir until just combined.
  4. Fold in blueberries, if using frozen do NOT thaw and you may need to add a few minutes baking time.
  5. Spoon into pans and bake 18-20 minutes or until golden brown.
