BLUEBERRY YOGURT MUFFINS
INGREDIENTS
- Servings: 12
- 2 cups Quaker Oat Bran Hot cereal uncooked
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1 carton (8 ozs) plain low fat yogurt
- 2 egg whites slightly beaten
- 1/4 cup skim milk
- 1/4 cup honey
- 2 Tbsp vegetable oil, 1 tsp grated lemon peel, 1/2 cup blueberries
DIRECTIONS
- Preheat oven to 425 degrees F, prepare pans. In large bowl, combine oat bran, sugar and baking powder.
- In small bowl, combine yogurt, egg whites, milk, honey, oil and lemon peel.
- Add dry mix to wet mix and stir until just combined.
- Fold in blueberries, if using frozen do NOT thaw and you may need to add a few minutes baking time.
- Spoon into pans and bake 18-20 minutes or until golden brown.
