Baked Apple Butter
  • 8 large apples, variety of choice
  • 1 cup unsweetened apple juice
  • 1 cup brown sugar
  • 2 1/2 tsp ground cinnamon
  • 3/4 tsp ground cloves
  • 1/2 tsp ground allspice
  • ground seeds of one large green cardamom pod
  • 1/4-1/2 tsp salt to taste
  1. Peel, core, and cut apples into chunks. Put apples and apple juice into a large saucepan and boil over medium heat for 30 minutes.
  2. Preheat oven to 275 degrees F.
  3. With stick blender or hand mixer, blend the apples and skins until smooth. You can also use a food processor or blender. Work in batches.
  4. Add the sugar , cinnamon, cloves, allspice, cardamom and salt. Stir to mix well. Pour into a 13x9 inch baking dish, and bake for 2 - 3 hours, stirring every half-hour, or until the butter reaches the consistency you like.
  5. Cool and place in jars. Process if desired.
The store-bought apple butter that we had in the kitchen when I was a kid was very dark and spicy. This one is the closest I could find.
