Baked Chicken and Herbed Rice
INGREDIENTS
- Cooking Time: 40 minutes
- Servings: 4
- Preparation Time: 5 minutes
- 1 Lb of Chicken Breast (we used pre-cut chicken tenders for easy serving)
- 1/4 Cup of Olive Oil
- 1/4 Cup of White Cooking Wine (You could also use red if you like)
- 2 Cups of Brown Rice, Uncooked (You could also use white)
- 1 Tbsp of Italian Seasoning
- 1 3/4 Cups of Water
DIRECTIONS
- You will need:
- 1 medium sized pot, big enough to cook the rice
- 2 Quart baking dish
- Measuring cups and spoons
- Small Bowl
- Tongs
- Mixing spoon
- 1. Pre-Heat oven to 350*f
- 2. In the small bowl mix the Olive Oil and White Cooking Wine together until well mixed and creamy in texture
- 3. Place chicken in baking dish (use tongs to prevent Salmonella), pour Olive Oil/Wine mix over the chicken, making sure to coat all the chicken. Place chicken in pre-heated oven and bake uncovered for 35-40 minutes, until internal temperature reaches 165*f
- 4. Put the water in the pot and bring to a boil. Add rice and Italian Seasoning, reduce heat to low and simmer covered for 5 minutes, than remove from heat, stir, re-cover and let stand for 5 minutes or until the water is fully absorbed than fluff with a fork
- 5. To serve put rice and chicken on each plate and spoon cooking liquid from chicken over both.
