Baked Chicken and Herbed Rice

  • 1 Lb of Chicken Breast (we used pre-cut chicken tenders for easy serving)
  • 1/4 Cup of Olive Oil
  • 1/4 Cup of White Cooking Wine (You could also use red if you like)
  • 2 Cups of Brown Rice, Uncooked (You could also use white)
  • 1 Tbsp of Italian Seasoning
  • 1 3/4 Cups of Water
  1. You will need:
  2. 1 medium sized pot, big enough to cook the rice
  3. 2 Quart baking dish
  4. Measuring cups and spoons
  5. Small Bowl
  6. Tongs
  7. Mixing spoon
  8. 1. Pre-Heat oven to 350*f
  9. 2. In the small bowl mix the Olive Oil and White Cooking Wine together until well mixed and creamy in texture
  10. 3. Place chicken in baking dish (use tongs to prevent Salmonella), pour Olive Oil/Wine mix over the chicken, making sure to coat all the chicken. Place chicken in pre-heated oven and bake uncovered for 35-40 minutes, until internal temperature reaches 165*f
  11. 4. Put the water in the pot and bring to a boil. Add rice and Italian Seasoning, reduce heat to low and simmer covered for 5 minutes, than remove from heat, stir, re-cover and let stand for 5 minutes or until the water is fully absorbed than fluff with a fork
  12. 5. To serve put rice and chicken on each plate and spoon cooking liquid from chicken over both.
Little Chef has a cold and her favorite foods are Chicken and Rice, so we made a nice meal together with her favorite things. Goes well with Birch Beer Soda as a treat!
