Baked Chow Mein Chicken
  • 1 can (5 ounces) chow mien noodles, crushed
  • 1 3 cup chopped blanched almonds
  • 1/3 cup butter or margarine
  • 2 tablespoons soy sauce
  • 2 teaspoons chopped fresh ginger
  • 1/4 teaspoon ground black pepper
  • 6 boneless skinless chicken breast halves
  1. Preheat oven to 40*F.
  2. Place chow mien noodles in a plastic zipper-top storage bag and crush with rolling pin.
  3. Combine crushed noodles and nuts in shallow dish.
  4. Melt butter in microwave.
  5. Add soy sauce, ginger and pepper; stir to combine.
  6. Dip chicken breasts in mixture, then roll in noodles.
  7. Gently press noodle mixture onto chicken.
  8. Lay in bottom of 9x13 pan.
  9. Bake 25-30 minutes or until juices run clear when chicken is pierced with a fork.
  10. Serve immediately.
