Baked Stuffed French Toast

  • 8 eggs
  • 4 tsp sugar
  • 1 tsp vanilla
  • 1-2 loaves day old French bread cut into 1/2 inch slices
  • 3 cups milk
  • Butter
  • Cinnamon
  • Confectioner's sugar
  • Filling:
  • 8 oz. softened cream cheese
  • 1 tsp vanilla
  • 1/2 cup walnuts (optional)
DIRECTIONS
  1. Grease a 9 x 13 glass baking dish generously with butter.
  2. Beat eggs, sugar, milk and vanilla in one bowl.
  3. Mix cream cheese, vanilla and nuts in another bowl.
  4. Spread cream cheese mix onto bread and make sandwiches.
  5. Place sandwiches into the pan very tightly.
  6. Pour egg mixture over the bread.
  7. Sprinkle cinnamon and dot each sandwich with a little pat of butter.
  8. Refrigerate overnight.
  9. Bake at 350 for 45 minutes or until middle is set.
  10. Sprinkle with confectioner's sugar.
  11. Serve with warm syrup.
