Baked Veggie Fries and Basil Aoili

  • Fries:
  • 4 medium carrots, or 2 medium sweet potatoes, sliced long ways into 1/2 inch-thick fries
  • Trader Joe's Coconut Oil Cooking Spray (or any cooking spray)
  • 1 tsp rosemary
  • Cracked pepper and garlic salt, to taste
  • Aioli:
  • 1/4 cup finely chopped fresh basil
  • 2 tbsp light olive oil mayo
  • 1 tbsp minced garlic
  • 1/2 tsp cracked pepper
  • OR
  • 1/4 cup fresh pesto
  • 1 tbsp light olive oil mayo
  • 1 tbsp minced garlic
  • 1/2 tsp cracked pepper
DIRECTIONS
  1. Preheat oven to 425 degrees. Spray carrot/sweet potato pieces with coconut oil spray and sprinkle herbs and spices generously. Place on greased cookie sheet and bake 20-25 minutes, turning over halfway through.
  2. For the aioli dipping sauce, combine all ingredients together! Flavors will melt into each other the longer it keeps, so this can be doubled and used for future meals.
