Banana Bread with extras
INGREDIENTS
  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cup of flour
DIRECTIONS
  1. Mash and mix bananas and butter. Mix in sugar, egg, vanilla, baking soda, salt. Add flour last. Now for the extras. Add about half cup or a full cup of chocolate chips and about a cup or more of mini marshmallows (in hindsight I think you can even add those little caramel squares to the mixture...yum!). Bake in a greased pan at 350C for about an hour or until inserted toothpick comes out dry.
  2. I know the marshmallows sound strange but several people sampled the bread and they said the marshmallows were an awesome addition :D
RECIPE BACKSTORY
I had a few bananas that were going to waste but once they get to that certain brownish yellow colour I dont feel like eating them. The solution: Banana Bread. But not plain old banana bread. The recipe is from http://www.elise.com
