Banana Chocolate Chip Cupcakes

  • For Cupcakes:
  • Full Box Dassant Louisiana Banana Bread Mix
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/3 cup milk
  • 2 mashed bananas
  • 1/2 cup mini chocolate chips
  • For Cream Cheese Frosting:
  • 1 8oz package softened cream cheese
  • 1/4 cup softened butter
  • 1 teaspoon vanilla extract
  • 1 cup sifted confectioners sugar
DIRECTIONS
  1. For Cupcakes:
  2. Preheat oven to 350°F. Line mini-cupcake tins with mini-baking cups.
  3. Combine eggs, melted butter, milk, mashed bananas, and mini chocolate chips. Add mix.
  4. Fold together gently until batter is smooth.
  5. Portion batter into prepared baking cups.
  6. Bake for 10 to 12 minutes.
  7. Cool completely before frosting.
  8. For Cream Cheese Frosting:
  9. In a medium bowl, cream together the cream cheese and butter until creamy.
  10. Mix in the vanilla, then gradually stir in the confectioner's sugar.
  11. Fill Ziploc® bag, snip off bottom corner, and using a circular motion gently squeeze frosting on each cupcake top.
  12. Garnish with a slice of banana.
