Banana Walnut Cookies
  • 1/2 cup butter
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1/4 tsp. nutmeg (optional)
  • 2-3 bananas
  • Chopped walnuts
  1. Preheat oven to 350°F.
  2. Cream together butter and brown sugar. Add eggs and beat.
  3. Then add baking powder flour, salt and spices.
  4. Mash banana (this banana may be frozen or fresh) and add.
  5. Mix in walnuts.
  6. Drop by teaspoon onto ungreased cookie sheet and bake for 15 minutes or until browned.
I had rapidly ripening bananas on the counter and wanted to do something different with them. I did a search online and found a recipe for these cookies. Something told me to bake a couple of "test" cookies first, which was a good idea, because they turned out a little bland. I realized the original recipe didn't call for any salt, so I added some; I then uppped the flour because the dough seemed a little thin. I also decided to add some spices just to punch up the flavor a bit. I brought some of these cookies to work, and they were a big hit. One person said it tasted just like banana bread (so I guess I didn't really make something different after all). I consider this a work in progess, feel free to tinker and improve it (I may try some whole wheat flour next time).
