Banana Walnut Cookies
INGREDIENTS
- 1/2 cup butter
- 1 cup brown sugar
- 2 eggs
- 1/2 teaspoon baking powder
- 2 1/4 cups all-purpose flour
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg (optional)
- 2-3 bananas
- Chopped walnuts
DIRECTIONS
- Preheat oven to 350°F.
- Cream together butter and brown sugar. Add eggs and beat.
- Then add baking powder flour, salt and spices.
- Mash banana (this banana may be frozen or fresh) and add.
- Mix in walnuts.
- Drop by teaspoon onto ungreased cookie sheet and bake for 15 minutes or until browned.
RECIPE BACKSTORY
I had rapidly ripening bananas on the counter and wanted to do something different with them. I did a search online and found a recipe for these cookies. Something told me to bake a couple of "test" cookies first, which was a good idea, because they turned out a little bland. I realized the original recipe didn't call for any salt, so I added some; I then uppped the flour because the dough seemed a little thin. I also decided to add some spices just to punch up the flavor a bit. I brought some of these cookies to work, and they were a big hit. One person said it tasted just like banana bread (so I guess I didn't really make something different after all). I consider this a work in progess, feel free to tinker and improve it (I may try some whole wheat flour next time).
