Barb's Oriental Pork

INGREDIENTS
  • 1 lb boneless pork, cut into 1" cubes
  • 1 egg, beaten
  • 1/4 cup cornstarch
  • 1/4 cup flour
  • 1 1/4 cups chicken broth
  • oil for frying
  • 1 medium onion, chopped large
  • 1 large green pepper, chopped large
  • (or half red and half green pepper)
  • 1/2 cup carrots, sliced diagonally
  • (pineapple chunks, if desired)
  • 1 clove fresh garlic, crushed
  • 2 Tbsp peanut oil
  • 1/2 cup white wine vinegar
  • 2 tsp soya sauce
  • 2 Tbsp cornstarch
DIRECTIONS
  1. Trim pork and cube.
  2. Whisk egg and add 1/4 cup cornstarch, flour, 1/4 cup chicken broth, and 1/2 tsp salt. Beat until smooth.
  3. Pour oil into skillet until 1" deep. Heat to 375 degrees F.
  4. Dip pork cubes into batter. Fry for 5-6 minutes or until golden. Drain and keep warm.
  5. In separate pan, fry green pepper, carrot, and garlic in 2 Tbsp peanut oil until tender. Stir in 1 cup chicken broth, sugar, wine vinegar and soya. Boil rapidly for 1 minute.
  6. Blend 1/4 cup cold water and 2 Tbsp cornstarch. Stir into veggies and cook until thickened.
  7. Fold pork cubes into veggies and serve over rice.
