Beef Taco’s
INGREDIENTS
  •  1 lb. ground beef
  •  1 tbsp olive oil
  •  ½ diced red onion
  •  ½ diced green pepper
  •  ½ diced red pepper
  •  1 cup diced mushrooms
  •  1 package of taco seasoning with some water
  •  2 minced garlic cloves
  •  2 cups shredded lettuce
  •  1 cup grated cheese
  •  1 cup diced tomatoes
  •  1 cup sour cream
  •  1 package taco shells, hard or soft
DIRECTIONS
  1. First, sauté the beef with the onions and the garlic. Cook thoroughly and then set aside in a bowl on the stove. Sauté mushrooms and peppers in olive oil. When veggies are limp return beef to pan and add seasonings. Simmer for 15-20 minutes. While simmering put lettuce, cheese, tomatoes and sour cream in separate bowls and serve on the side. Warm the tortillas on a plate in the microwave.

  4. ✔ Use mixed greens instead of ice burg lettuce.
  5. ✔ Use low-fat cheese and sour cream
  6. ✔ Instead of using flour tortillas, use multi-grain corn tortillas crumbled up and make a salad instead of taco’s
