Black Bean Dip
  • 2 cups fresh corn
  • 4 cloves minced garlic
  • 1 can black beans, drained and rinsed
  • 4 oz cream cheese
  • 1 small jalapeno pepper seeded
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • salt and pepper to taste
  • 2 cups monterey jack cheese
  1. Saute' corn and 2 cloves of garlic until the corn is slightly browned.
  2. Set aside to cool
  3. In a food processor combine 2 cloves garlic, beans, cream cheese, jalapeno and the seasonings.
  4. Place 1/2 of bean mixture into bottom of serving dish, then 1/2 the corn, repeat with remaining beans and corn.
  5. Top with cheese and server with tortilla chips.
This is an easy dip for parties and is great with tortilla chips or on pita bread.
