Black Bean Soup
INGREDIENTS
  • Cooking Time: 25 minutes

  • Preparation Time: 15 minutes
  • 2 cans black beans (16 oz. each)
  • 1 c. chicken broth
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 jar of salsa
  • 4 tsp. lime juice
  • 2 tsp. cumin
  • 1/4 tsp. crushed red pepper
  • 1/3 c. plain yogurt
  • 1 Tbls. cilantro, chopped
DIRECTIONS
  1. Blend half beans and broth in a blender until smooth
  2. In a large saucepan, heat a little oil
  3. Cook onion and garlic 4-5 minutes or until onion is soft
  4. Add bean mixture, remaining beans, salsa, lime juice, cumin, and red pepper
  5. Bring to a boil, reduce heat and simmer 25 minutes
  6. Serve with yogurt and cilantro garnish
