Black Bean Soup

- Preparation Time: 15 minutes
- 2 cans black beans (16 oz. each)
- 1 c. chicken broth
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 jar of salsa
- 4 tsp. lime juice
- 2 tsp. cumin
- 1/4 tsp. crushed red pepper
- 1/3 c. plain yogurt
- 1 Tbls. cilantro, chopped
DIRECTIONS
- Blend half beans and broth in a blender until smooth
- In a large saucepan, heat a little oil
- Cook onion and garlic 4-5 minutes or until onion is soft
- Add bean mixture, remaining beans, salsa, lime juice, cumin, and red pepper
- Bring to a boil, reduce heat and simmer 25 minutes
- Serve with yogurt and cilantro garnish
