Black Bottom Cupcakes

INGREDIENTS
  • Cream Cheese Mixture:
  • 1 (8oz.) cream cheese, softened
  • 1 egg, beaten
  • 1/3 c. sugar
  • 1/8 tsp. salt
  • 1 (6oz.) pkg. chocolate chips
  • Chocolate Mixture:
  • 1 1/2 c. all purpose flour
  • 1 c. sugar
  • 1/4 c. cocoa
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. water
  • 1 tsp. vanilla
  • 1/3 c. oil
  • 1 Tbsp. vinegar
DIRECTIONS
  1. CREAM CHEESE MIXTURE: Combine and beat well cream cheese, egg, 1/3 c. sugar, and 1/8 tsp. salt. Stir in chocolate chips. Set aside.
  2. CHOCOLATE MIXTURE: Sift together: flour, 1 c. sugar, cocoa, baking soda and 1/2 tsp. salt. Mix well: water, vanilla, oil, and vinegar, and add to the flour mixture. Fill cupcake liners 1/2 full with chocolate mixture.
  3. Drop 1/2 tsp. of cream cheese mixture on top. Bake at 350 for 20 minutes. Yield: 20 ci[cales.
