Blackened Shrimp over Baked Sweet Potato with andouille sauce

  • 10 deveined gulf shrimp
  • 2 sweet potatoes
  • 1/3 cup diced andouille
  • 1.4 tsp minces garlic
  • 1 tblsp honey
  • 1 bunch green onions
  • 3.4 cup heavy whipping cream
  • cajun seasoning
DIRECTIONS
  1. bake sweet potatoes in oven @ 350 for 1-1/2 hours
  2. season shrimp with cajun seasoning
  3. brown dice andouille, onions and garlic in a skillet
  4. add cream and honey.
  5. mash sweet potatoes
  6. blacken shrimp on high heat approx 30-40 second on each side
  7. place a dollop of creamed potato in bowl, spoon andouille sauce on potato and top with blackened shirimp
