INGREDIENTS
  • 1 quart lukewarm water
  • 2 yeast cake
  • 5 tbsp sugar
  • 1/2 cup soybean oil
  • 1 tbsp salt
  • 3 eggs - well beaten
  • 10 cups white flour
  • 4 cups whole wheat flour
DIRECTIONS
  1. Mix together water, yeast and sugar. Let stand until yeast is dissolved. Add oil, salt and eggs. Add 4 cups flour, whole wheat first. Beat thoroughly. Add remaining flour gradually mixing to a dough that is stiff enough not to stick to hands.
  2. Turn out onto floured board and knead lightly. Return to greased bowl, cover and let rise until double in bulk. Punch down then let rise again.
  3. Shape into loaves, do not over handle. Let rise to top of pans. Bake in 350 oven for 45 minutes to 1 hour.
RECIPE BACKSTORY
Lynn: I can remember Mom "spanking" the bread to make sure the loaves had no air bubbles in them. I still "spank" mine!
