Broccoli & Zucchini

- 2 cups chopped fresh broccoli
- 1/2 cup chopped onions
- 2 cups chopped zucchini, unpared
- 1 clove garlic, minced
- 2 tbls margarine
- 3 tbls flour
- 2 tbls parsley
- 1/2 tsp salt
- 1/2 tsp oregano
- 3/4 cup milk
- 1 1/2 cups ricotta cheese
- 8oz spinach noodles, cooked, drained and buttered
- Parmesan cheese
DIRECTIONS
- Cook broccoli and zucchini covered in boiling water until tender, about 10 minutes, drain
- In large saucepan cook onion and garlic in margarine
- Blend in flour parsley, salt and oregano
- Add milk all at once
- Cook until thickened and buttery
- Add cheese and stir till nearly melted
- Stir in broccoli and zucchini
- Serve over hot noodles, top with Parmesan cheese
