Broccoli & Zucchini

  • 2 cups chopped fresh broccoli
  • 1/2 cup chopped onions
  • 2 cups chopped zucchini, unpared
  • 1 clove garlic, minced
  • 2 tbls margarine
  • 3 tbls flour
  • 2 tbls parsley
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 3/4 cup milk
  • 1 1/2 cups ricotta cheese
  • 8oz spinach noodles, cooked, drained and buttered
  • Parmesan cheese
DIRECTIONS
  1. Cook broccoli and zucchini covered in boiling water until tender, about 10 minutes, drain
  2. In large saucepan cook onion and garlic in margarine
  3. Blend in flour parsley, salt and oregano
  4. Add milk all at once
  5. Cook until thickened and buttery
  6. Add cheese and stir till nearly melted
  7. Stir in broccoli and zucchini
  8. Serve over hot noodles, top with Parmesan cheese
