Broccoli Potato Soup
INGREDIENTS
  • 2 medium potatoes, peeled and cut in 1 in cubes
  • 3 cups of water
  • 2 cups of milk
  • 1 package of seasoned instant mashed potatoes
  • 1 tsp garlic powder
  • 1/2 c sour cream
  • 1/2 c shredded cheddar cheese
  • 1 cup cooked broccoli
  • salt and pepper
  • sour cream and cheese to garnish
DIRECTIONS
  1. This recipe was from my early married days when we were broke and groceries were not a high priority. This soup is inexpensive and easy to make. It calls for a package of instant potatoes that are seasoned, this is generally sold in a box with two bags of potatoes and seasonings inside (Betty Crocker makes one and so does the walmart great value brand), I like to use the roasted garlic or butter and herb variety for this soup.
  2. 2 medium potatoes, peeled and cut in 1 in cubes

  7. 1/2 c sour cream
  8. 1/2 c shredded cheddar cheese
  9. 1 cup cooked broccoli

  11. sour cream and cheese to garnish
  12. Boil the potatoes until they are soft, but not mushy. The amount of water should be enough to boil the potates in (3 cups is a guess).
  13. Bring down the heat to medium low. Add the broccoli and garlic powder. At this point add the package of potatoes. The amount of milk will be to get your soup to a consistency you enjoy.
  14. Add the sour cream and cheese about 1 minute before you take off of heat.
  15. Garnish with a dollop of sour cream and sprinkling of cheese.
