Broccoli and Raisin Salad
INGREDIENTS

  • 2 cups chopped broccoli
  • 3/4 cup grated carrot
  • 1/4 cup chopped red onion
  • 1/4 cup sunflower seeds
  • 1/4 cup raisins
  • Dressing
  • 1 - 2 oranges
  • 2 Tbsp olive oil
  • 1 Tbsp maple syrup
  • or 1-2 dates
  • Sea salt
  • Variations
  • Add a small amount of soaked cashews to your dressing if you want it creamy.
  • Sprinkle in hemp hearts, caraway or sesame seeds.
  • Purple cabbage or diced up red pepper will go well in this type of salad.
DIRECTIONS
  1. Toss salad ingredients in a good size bowl.
  2. Whiz dressing ingredients until smooth.
  3. Pour over salad, stir, chill and serve.
RECIPE BACKSTORY
I make this salad often and never get tired of it. It is portable, stays fresh in the fridge for a few days. It is always well received when taken to potlucks or picnics.
