Butter Pecan Fudge

  • 1/2 cup of butter
  • 1/2 cup of white sugar
  • 1/2 cup of brown sugar
  • 1/2 cup of heavy whipping cream
  • 1/8 tsp of salt
  • 1 tsp of vanilla
  • 2 cups of icing sugar
  • 1 cup of pecan halves, toasted and coarsely chopped
DIRECTIONS
  1. In a large heavy saucepan, combine butter, sugars, cream and salt.
  2. Bring to a boil over medium heat, stirring occasionally.
  3. Boil for 5 minutes, stirring constantly.
  4. Remove from heat, stir in vanilla.
  5. Stir in icing sugar until smooth.
  6. Fold in pecans.
  7. Spread into a buttered 8 inch square dish.
  8. Cool to room temperature.
  9. Cut into 1 inch squares.
  10. Store in an air tight container in the refrigerator.
