Buttermilk Pancakes
  • 2 cups flour
  • 1 Tbsp. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 large egg
  • 2 cups buttermilk
  • 2 Tbsp. melted butter
  1. Combine the flour, baking soda, baking powder, and sugar in a large bowl. Break the egg into 4-cup measure,add the buttermilk, and mix throughly. Add to the flour mixture and beat with a whisk or mixer until smooth. Pour into a covered container, refrigerate overnight. Next morning, beat the batter throughly , adding more buttermilk if needed. Stir in melted butter. Grease griddle and heat to medium. Pour 1/4 cup batter for each pancake.
