CARROT SOUFFLE

  • 3-1/2 lbs. carrots (peeled)
  • 3 cups sugar
  • 1 tbsp .baking powder
  • 1 tbsp .vanilla
  • 1/4 cup flour
  • 6 eggs
  • 1/2 lb. butter
  • powdered sugar
DIRECTIONS
  1. Boil carrots until extra soft ,drain
  2. well . While carrots are warm
  3. add sugar, baking powder,
  4. & vanilla . Whip with mixer
  5. until smooth, add flour and mix
  6. well . Whip eggs , add to the
  7. mixture, add soften butter &
  8. blend well . Pour in a baking
  9. dish about half full as the souffle
  10. will rise .
  11. Bake @ 350 degrees. About
  12. 1 hour.
  13. Sprinkle with powdered sugar
