COOKED EGGNOG

INGREDIENTS
- 6 eggs, beaten
- 1/4 cup sugar
- 1/4 teaspoon salt, optional
- 1 quart milk, divided
- 1 teaspoon vanilla
- nutmeg OR cinnamon
DIRECTIONS
- In saucepan, combine beaten eggs, sugar, and salt. Stir in 2 cups of milk. Cook over low heat stirring constantly, until it reaches 160 degrees. Remove from heat.
- Add remaining 2 cups of milk and vanilla. Pour into pitcher or jar. Cover and refrigerate until thoroughly chilled, a few hours or overnight.
