CRANBERRY PUMPKIN BREAD
INGREDIENTS
  • Cooking Time: 60
  • 2-1/4 cup flour
  • 1 Tablespoon pumpkin pie spice*
  • 1 teaspoon baking soda
  • 2 eggs
  • 2 cups sugar
  • 1/2 cup melted margarine OR applesauce
  • 1 cup pumpkin
  • 1 cup fresh cranberries, chopped
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Grease and flour 2 - 8x3x2 inch pans.
  3. Combine dry ingredients. Set aside.
  4. Mix well: eggs, sugar, melted margarine, and pumpkin.
  5. Stir into dry ingredients. Stir only until moistened.
  6. Fold in chopped cranberries.
  7. Spoon into prepared pans.
  8. Bake at 350 degrees for 1 hour OR until toothpick comes out clean.
