Cajun Chicken Cesar Salad

  • 4 Chicken Breasts
  • 2 Bags of chopped Romaine Lettuce
  • 1 Bag of Fresh Gourmet Garlic Butter Croutons
  • Marie's Creamy Cesar Salad Dressing
  • 1 c Olive Oil
  • 1 c coarsely chopped Red Onion
  • Shredded fresh Parmesean Cheese
  • Cajun Choice seasoning
  1. Wash and dry the chicken breasts
  2. Place in a dish and pour Olive Oil on top
  3. Make sure chicken is covered with Olive Oil
  4. If you need to add more you can
  5. Sprinkle Cajun Choice seasoning generously over chicken
  6. Cover and refrigerate
  7. You can leave the chicken in the refrigerator from 15 minutes to several hours
  8. Grill chicken on the barbecue on medium heat for 7 minutes
  9. Flip chicken over
  10. Sprinkle generously with the Cajun Choice seasoning
  11. Cook chicken for another 7 minutes or until no longer pink
  12. Remove chicken from grill
  13. Slice into thin slices
  14. Put lettuce into a large serving bowl
  15. Add onions and chicken to lettuce
  16. Add dressing to taste
  17. Add Parmesean Cheese to taste
  18. Serve immediately
I had a salad similar to this at a restaurant once and I loved it. It was such a tasty spin on the traditional Cesar Salad! I lived far away from this restaurant and I knew the only way I would be able to have it as often as I wanted it would be to make it myself. This recipe is the result of my experimenting until I got it right. It probably isn't the restaurant's exact recipe but it sure is good!
