Cajun Fire Chicken Salad
INGREDIENTS
  • 1 lb Boneless Skinless Chicken Breasts
  • 2 Tbsp Olive Oil
  • 2 Romaine Lettuce
  • 1/3 cup Parmesan, Shaved Or Shredded
  • 1 Tbsp Chili Powder
  • 2 Tbsp Cayenne Pepper
  • 1 Tbsp Parsley
  • 1/2 tsp Nutmeg
  • 1/2 tsp Onion Powder
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Black Pepper
  • 1/2 Tbsp Salt
DIRECTIONS
  1. *Cut chicken in half (like tenderloin pieces)
  2. *In a small bowl, combine spices and stir to mix
  3. *Sprinkle over chicken
  4. *Heat oil in pan over medium-high; cook chicken 8-10 minutes until cooked through and crisped; set aside to cool
  5. *Roughly chop the romaine; top with parmesan
  6. *Slice chicken on the diagonal and lay on salad
  7. *Add any other toppings you prefer
  8. Recipe Tips:
  9. *For less spice, cut the cayenne in half or only sprinkle on part of the spice mixture rather than the whole batch
  10. *Also, adding dressing cuts down the heat
