Cajun Shrimp & Polenta
INGREDIENTS

- 2 tsp · olive oil
- ½ cup · chopped onion
- 1 ¾ cup · yellow cornmeal
- 1 clove · garlic minced
- 1 tsp · chili powder
- 1 tsp · paprika
- 1 cup · chopped green bell pepper
- ½ cup · frozen corn
- ½ cup · black beans
- 6 cup · boiling water
- 3 tbsp · butter (unsalted)
- 16 large · shrimp, cooked or 32 small shrimp, cooked
- 1 hot sauce ( your choice) .
DIRECTIONS
- 1. whisk cornmeal gradually into boiling water cover over low.heat for fifteen minutes whisking often
- 2. remove from.heat stir.in butter and set aside Add Picture
- 3. heat oil in in skillet over medium.heat Add Picture
- 4. saute onion garlic chili powder and paprika 2 minutes Add Picture
- 5. add green pepper corn and black beans, cook.for 6 minutes.. Add Picture
- 6. add shrimp and saute until warmed through Add Picture
- 7. top with your favorite hot sauce ( i prefer Siracha) .. and serve over polenta
