Caramelized Pear and Onion Mashed Potatoes

INGREDIENTS
  • 8 Medium size potatoes
  • 1 Pear, peeled and chopped
  • 1 Red onion, finely chopped
  • 2 Tablespoons butter
  • 1 Cup milk
  • Salt & Pepper
DIRECTIONS
  1. Peel and cut potatoes. Place in a saucepan, cover with cold salted water and cook over medium high heat for 30 minutes. Saute pear and onion in butter until brown and caramelized. Mash potatoes, add milk, pear and onion mixture, salt and pepper.
