Carnitas
INGREDIENTS
  • 1 1/2 lb Pork Shoulder, Or Beef If You Prefer
  • 2 Tbsp Oil
  • 1 1/2 tsp Salt
  • 1 1/2 cup Water
  • 2 tsp Chili Powder
  • 1/2 tsp Cayenne Pepper
  • 1 Bay Leaf
  • 1/2 tsp Cumin
  • 3 Garlic Cloves, Minced
  • 1 Lime, Sliced
  • 1 Tbsp Fresh Cilantro, Chopped
  • 1 cup Grape Tomatoes, Chopped
  • 1 cup Onion, Diced
  • small Tortillas
DIRECTIONS
  1. *Add 2 Tbsp oil to pan over medium-high heat
  2. *Cut meat into pieces until they will fit in your crockpot
  3. *Season with salt & pepper and add it to the heated oil pan; brown meat on each side
  4. *In a crockpot, on high, combine water, chili powder, cayenne, cumin, garlic, and bay leaf; add the browned meat and simmer 3 1/2 hours
  5. *Once the meat is cooked, it should be falling apart, loosely shred the meat and add it with the juices back into the original pan on stove
  6. *Heat on medium-high another 10 minutes until juices have boiled off and meat is slightly crisped
  7. *Chop onions, tomatoes, cilantro, and slice limes; warm tortillas
  8. *In each tortilla, layer meat, onions, tomatoes, cilantro, and any other topping of choice; sprinkle with a squeeze of lime and serve rolled up in a glass filled with rice (serving in glass optional)
