Carol's Hamburger & Cabbage Casserole
INGREDIENTS
- 1 lb. ground beef
- 2 Tbsp olive oil
- 1 lg. onion, chopped
- 1 med. green pepper, chopped
- 2 jalapeno peppers, 1 seeded and both chopped
- 2 stalks celery, chopped
- 1/2 small head cabbage, finely sliced
- 1 10 oz can Ro-Tel tomatoes & peppers
- 1 14 1/2 oz can petite diced tomatoes
- salt & pepper to taste
- 1 1/2 C fresh bread crumbs (I used whole wheat bread)
- 1 C shredded colby Jack cheese
DIRECTIONS
- Heat olive oil in a large skillet.
- Add onion, green pepper, jalapenos, and celery. Saute until onion is tender.
- Add ground beef.
- Cook until the ground beef is browned.
- Drain.
- Return to skillet.
- Add the sliced cabbage.
- Cook stirring frequently for 10-15 minutes or until the cabbage is tender.
- Add the Ro-Tel, diced tomatoes, and salt & pepper.
- Heat through.
- Put 1/2 of meat mixture into a casserole.
- Top with 1/2 of the bread crumbs.
- Add the remaining meat mixture and top with the remaining bread crumbs.
- Bake at 350 ° for 30 minutes.
- Remove from oven and add the cheese.
- Put back into oven and cook about 15 minutes more.
- When I make this again I think I'll put a couple of teaspoons of chili powder in the meat mixture.
- All of this came about because I had cabbage that needed to be used and I didn't want the same ol same ol. Hope you enjoy this. Carol
