Carrot-Banana Bars

  • Three large bananas, mashed smooth
  • 2 generous cups grated carrot
  • 2-1/4 cups flour (I used 1 cup white, 1-1/4 cup wholewheat)
  • 1/2 cup oil
  • 3/4 cup light brown sugar
  • 1/2 tsp crushed/powdered cardamom seeds
  • 1 TBS baking soda
  • 1/2 cup raisins
  • 1/4 tsp salt
DIRECTIONS
  1. Preheat 350F
  2. Fit an 8" square cake pan w/parchment paper then grease
  3. Combine flour, salt, cardamom, sugar and baking soda in large bowl
  4. Mix in bananas and oil, just till moist
  5. Fold in carrots and raisins
  6. Bake 45mins or until tests done
  7. Cool in pan for 10 mins
  8. Cool on wire rack
  9. Frost with cream cheese frosting if desired (yummy)
