Carrot-Banana Bars

- Three large bananas, mashed smooth
- 2 generous cups grated carrot
- 2-1/4 cups flour (I used 1 cup white, 1-1/4 cup wholewheat)
- 1/2 cup oil
- 3/4 cup light brown sugar
- 1/2 tsp crushed/powdered cardamom seeds
- 1 TBS baking soda
- 1/2 cup raisins
- 1/4 tsp salt
DIRECTIONS
- Preheat 350F
- Fit an 8" square cake pan w/parchment paper then grease
- Combine flour, salt, cardamom, sugar and baking soda in large bowl
- Mix in bananas and oil, just till moist
- Fold in carrots and raisins
- Bake 45mins or until tests done
- Cool in pan for 10 mins
- Cool on wire rack
- Frost with cream cheese frosting if desired (yummy)
