Carrot Cake

INGREDIENTS
  • 2 c. flour
  • 2 c. sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 c. shredded carrots
  • 1 c. vegetable oil
  • 4 eggs
  • Cream Cheese Frosting (see recipe)
DIRECTIONS
  1. Preheat oven to 325 deg.
  2. Grease and flour pan.
  3. Combine first 6 ingredients.
  4. Beat in next 3 ingredients.
  5. Beat on medium speed for 2 min.
  6. Bake for 50-60 min.
  7. Let cool and remove from pan.
  8. Frost with Cream Cheese Frosting
