Carrot Cake

  • 1 1/2 cups corn oil
  • 2 cups sugar
  • 3 eggs
  • 2 cups flour, sifted
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • 1 cup flake coconut
  • 2 cups carrots, shredded
  • 1 cup nuts, chopped
  • 1 small can crushed pineapple, drained well
DIRECTIONS
  1. Combine all ingredients until well blended. Bake in a 9x13 pan at 350 degrees for 1 hour.
